Tajine or tagine (pronounced tadjien) is the name for the cookware traditionally used in Morocco. Due to their gentle cooking method, tajines are also extremely popular in this country: the natural aroma of the ingredients and the valuable vitamins remain contained and the food gets an incomparable spicy taste. Tajines from Casa-Moro are ideal for cooking fish, meat, poultry and vegetables. Traditionally, desserts are also prepared in the casserole and even bread is baked.
And it's so simple: the tagine is filled with the ingredients and placed in the oven, on the charcoal grill or the stovetop. The heat causes steam to rise, which condenses on the lid and drips back down. This preserves the liquid and the food cooks in its own juices. A little saffron, cumin and turmeric add a real oriental touch. The addition of fat is not necessary, but a little olive oil intensifies the flavor.
